pesto {it's the besto.}

Promised a few of you I'd share how I make pesto...  

PESTO

3 c. fresh basil leaves
1 1/2 c. walnuts
1/4 c. grated parmesan cheese
3-4 cloves garlic, peeled
3/4 - 1 c. olive oil (depends on your taste)
salt and pepper to taste

Put the basil, walnuts, parmesan cheese and garlic in the food processor.  


Run it for 15-20 seconds to blend.
Then slowly add your oil.


Salt & pepper to taste.  Blend a bit more.  

Done.


If I'm being honest, it never looks very appetizing to me.  Smells delish.  Looks like green gunk.  But throw it in some pasta with chicken or shrimp and it's delicious.  Or, my current favorite lunch:  pesto, tomatoes and mozzarella cheese on 2 slices of whole wheat bread or a whole wheat pita.  Scrumptious!

Anyone else have a recipe they'd like to share?  
I'm pretty rookie and suggestions are welcome!

My husband's favorite pesto dish of all time- we call it Pasta Pesto Mess. You need a not-jumbo-sized jar of spaghetti sauce (or make your own), a pound of pasta (I like big rigatoni but anything will work as long as it's a shape), and some mozzarella (fresh is absolutely the best but shredded is ok too). Couldn't be easier. Cook the pasta. Put half of the red sauce in the bottom of a casserole dish. Dump in half the pasta. Bloop some pesto in over the pasta to make a nice layer. Then go with the rest of your pasta, then the rest of the sauce. Top with mozzarella and bake till it's bubbly. This really looks like the mess we've called it when you serve it up, but tastes freakin' excellent.

My recipe is just like your only I use pine nuts instead of walnuts.

I made a batch and froze it one summer and found it the day before Thanksgiving so we ate it on crackers and it was the best ever! I stored it covered with a layer of olive oil and the flavors were so rich when it was thawed--Incredible!

I've never made it with walnuts only pinenuts...that looks fabulous!
